increase the volume again

by adding solid butter which will melt and bubble out to increase the volume after reduction.

mount

"aufziehen" = "montieren". You "mount" a sauce with butter.

Yes, esoteric, as in "known to a small group." More people will understand "finish" than "mount." The best choice depends on the target audience.
