subtle

Subtle - A positive characteristic usually referring to a delicate wine that offers up nuances of flavor and aroma
could not find a definition for feinnervig, but it seems to be paired quite often with "fruchtig & spritzig',- as does 'subtle'

4 KudoZ points awarded for this answer. Comment: "This was a tough choice, all the answers would have worked (less the asparagus overtones)."

...eher feinnervig, lebhafte Struktur

You could combine these two as follows:

...with a delicate and pleasant texture

Ricotta, which originated in the Mediterranean region, especially Southern Italy, is a cheese with a delicate and pleasant texture and a neutral flavor, and may be added to sweet and savory foods.
Peer comment(s):

agree writeaway : yes, but in your refs you've skipped a course. the Italians consider ricotta to be a cheese not a wine. but a cheese with a delicate texture, non è vero?

fine-nerved / delicately structured

In the world of wine writing, anything goes. I once read of a 20-year-old Riesling that its "tree-ripened capsicum hints have broadened into asparagus overtones".... Go on! Dare to be literal!

The alternative "delicately structured" is offered as a cop-out if you lack the intestinal fortitude. People really do talk about the "structure" of wines, you know.
