mushroom soup
Depends on what the soup actually consists of. Most Englishmen, I would guess, have never experienced eating fungus from a forest, as is common in Sweden. Most Englishmen, I think, generalise and call all fungus mushrooms. I think fungus soup would sound disgusting to most Englishmen.

: I call them 'forest fungi' or specify the 'chantrelles', 'oyster mushrooms', 'ceps' etc. t o make them sound more attractive!

: I think "liten" is used here as a quaint little addition. It doesn´t need to be translated.

: you could translate "liten" as well, and say something like "small serving of mushroom soup"

Comment: "Well, it was the "liten" I wondered about. But it's probably true that it just means a small portion. Thanks all."

Straight from the forest, yummy!

soup with fungi
I would simply drop the 'liten'.
At this time of year it is of course the season for exciting, more lor less wild, fungi, 'forest fungi', or the various specific sorts which have to be defined individually.
Most of these are served with the later courses, not as soup, in my experience, but you do get very delicious 'tragtkantareller' in Sweden which are lovely in soup.
The classic is 'cream of mushroom soup', but I would then expect the Swedish to call the main ingredient 'champinjon'.

My English book on fungi gives no common name for the \'tragtkantareller\' and classifies them as \'rare\', so they are probably not used here.
Fungi or forest fungi are much prized by anyone who has tried them!
