I've used that in bread recipes (sometimes to replace soda - cannot be bought everyone in decent quantities - prison problem)

Mea culpa, mea maxima culpa. Yes, sure, without *e*. Fingers faster than mind. Think - soda - prison - men. That's why in some countries one cannot buy soda anymore in larger quantites.
agree TonyTK : Certainly "lecithin" (sans "e") and just "gluten" would be fine AFAIK // briethe, you must be the only person on Proz who isn't in the know - Edith is Al Capone's great great niece (that's why I never disagree with her ...).

agree MMUlr : I don't know about your soda-prison problem (?) either, but IMO you need "wheat" as there is also "corn gluten".
