Spanish term

en conserva al natural

Spanish to English Marketing Food & Drink asparagus
SPAIN: Really 2 doubts here. Does "en conserva" always mean canned; and how do we say "al natural" in English. I usually understand it as "not pickled"...
"La cooperativa Centro Sur, más conocida como CESURCA, ubicada en Huétor Tájar, es la única cooperativa inscrita al Consejo Regulador, y por lo tanto la única autorizada para su comercialización, en fresco, en conserva al natural o en conserva en aceite de Oliva Virgen Extra, este último mencionado como “sublime” entre algunos chefs de España."

Discussion

Rachel Fell Mar 15, 2011:
@neilmac - I think you can get them in jars too.
Rachel Fell Mar 14, 2011:
@Gilla: yes, you can get Spanish asparagus in a tin in water, citric acid and salt.
Charles Davis Mar 14, 2011:
Hi Neil This may well be no help at all, but here's a page headed "Las conservas: espárragos al natural" where you add salmuera, put them in "frascos" (which are surely jars), and then boil them for two hours. I have to say I would call this "preserving".

And here's another, very similar, again with brine and again cooked in closed containers (tarros this time). The latter is the "conserva" bit, it seems. You have to check the vacuum seal afterwards. See pp. 15-16:
http://sallavor.org/resources/conservacion-alimentos.pdf
The method reminds me of my Manchegan mother-in-law doing rabbit en escabeche.

Isamar Mar 14, 2011:
Why not just go with "preserved" by itself?
Evans (X) Mar 14, 2011:
I think you'll have to go for preserved in that case. Usually it is in jars, but you need to cover all possibilities. I have a jar in the cupboard, which is in brine. You may be able to get it in plain water (probably with citric acid added) but I'm not sure.
neilmac (asker) Mar 14, 2011:
My problem is that asparagus comes in cans AND bottles/jars... and other packaging...
Andrew Bramhall Mar 14, 2011:
Sorry! Hadn't noticed the Asker's additional context reply when I posted previously- conserved then in its own natural juices (plus water, obviously)
neilmac (asker) Mar 14, 2011:
Brine is usally "salmuera". "Al natural" would usually mean no brine, no oil etc, maybe "natural" is the best option, although nowadays I associate that with "healthy" food advertising.
Andrew Bramhall Mar 14, 2011:
En conserva Often means canned, particularly if this is fish related, but preservation can be in bottles, jars, etc, depending on the item concerned.
neilmac (asker) Mar 14, 2011:
Sorry it ¡s about asparagus. Th AI must be from the last term I posted, it's been a busy day here...
schevallier Mar 14, 2011:
agree with Gilla : "in brine"
neilmac (asker) Mar 14, 2011:
Note: the glossaries suggest "preserved" but I associate this with jams, chutneys or marmalade, not vegetables. That's why I'm posting the query. I know it's in the glossaries already so do not need reminding/nagging.
Evans (X) Mar 14, 2011:
By the way, why did you put it under Artificial Insemination? The mind boggles, or pickles...
Evans (X) Mar 14, 2011:
what is being canned? If it is fish it is usually "in brine" or "in oil". I think your al natural is probably in brine.

canned/bottled/preserved in brine

Given that it's asparagus, I think this is probably what it means.
Peer comment(s):

agree schevallier : in brine :)

thanks schevallier, it's hard to know for sure whether it's brine or water with citric acid. Either seem to be regarded as "al natural"
agree David Brown : my jar of asparagus says water, salt and acidifier (but it is neither particularly salty nor acidic"

Thanks David. I think the brine used in this type of preserve is very mild.

canned in water

Some foods are canned in water (natural) and others in oil.

canned

"canned asparagus"

should suffice, there is simply no other conventional way to put it and I, for one, see no reason to create something that doesn't exist because this is not litterature,

...plus, "canned" alone implies that it is "al natural" (any extra ingredient would be mentioned, otherwise,)

Nevertheless, I still think that most of the time, citric acid or any other mean of preservation/brine is still considered as "al natural" which is why I agree with Gilla

but, if you want your asparagus really "natural", then do not add anything to your description

IMHO ;)
