This is done in front of the client, not in the restaurant's kitchen. Tableside means it is done next to the client's table. That is why I suggested "en directo", probably not a very good suggestion...

Lo he visto en varios textos de turismo. Sí, la idea de la mesa no está, puede ser a la vista desde la cocina... pero creo que es una opción.
