agree Toni Castano : Possible meaning, sure, but it could also mean "Servicio de aparato digestivo", not just one person, but the whole team. The context does not permit to know what is exactly meant here.

Thanks Toni. I agree, it could be the department, I was torn between both options but went for doctor as thought it went better with "el cirujano"

Not a literal translation per se, but I think it could work in the case of the query sentence:

"EMR and DSE is/are carried out by the team, with the surgeon collaborating..."

PS: I'm not 100% sure about the aconyms...
