agree  Neil Ashby: I'd go with "in water/oil phases", or "aqueous" for a more scientific register. // I have a PhD in surface science and emulsions - I read 100s of papers on the matter - we do NOT use "oleaginous" - ever. We use both water and aqueous in the field.
