I see this all the time in Spanish legal and business documents. It's a somewhat squishy phrase, but what usually works is to shift its position, thus: ".... in her capacity as the duly authorized Legal Representative of the Company..."

Msgreenfie is right: it really doesn't add any meaning, so I would just drop it. Normally, the phrase is "como mejor proceda en derecho", something like "in accordance with the law".
Also, are you sure this "apoderado" is a woman? If it's not, you should change your "in her capacity as" to "in HIS capacity as".
I would alse translate "apoderado" as "attorney-in-fact".
