Not graded by the large retailers? I.e. too big, too small, marks on them, just not right in some way?

" non calibrés par la grande distribution" well if they are not graded they are not used so it's a way to use potatoes that "Carrefour"-like won't buy... Smart deal I think....

the calibrage is the action of "measuring", sizing, the potatoes by passing them through square meshes of given dimensions. Can't find the specific name for this in english apart from 'sizing' or "grading'

it's about (the creation of) a range of products made from potatoes (like mashed potatoes, chips, crisps, and maybe any dish made essentially of potatoes like shepherd's pie, etc.) no matter the size (of the potatoes indeed !) to develop (valoriser) potatoes farming (la filière) in a specific area

I'm not sure what "calibrés" is supposed to agree with - if it was pommes de terre, it should be calibrées, so presumably it's "produits". And I'm also not sure what "pour une valorisation de cette filière" means. Could the French be badly written?

agree B D Finch : Yes for "ungraded", but don't think your explanation makes sense. Potatoes that are too large or too small or the wrong shape to be graded by supermarkets.// The "transformeur" will pay less for them because they are ungraded and they won't go to waste.

not sorted out by size/not graded by size

The "calibre" is the size of the fruit. Besides this characteristic, fruit can be graded and sorted on the basis of colour, of lack or presence of spots and perhaps on the basis of other characteristics. Then of course, grading takes place before, or just before sorting out. So the context should be taken into consideration between the operation and the result.
