smooth silky attack

In my experience in translation, I have seen this problem before, and I would adise translating it by two words rather than one as wine tasting is more plentiful in English as far as words are concerned than in French.
This I have found before on videos on wine making as I also teach specializes English and French to mine makers and wine-tasters on an on-and-off basis.
