[Assemblage:
French term for "assembling," or blending of wines. In acuality, it is the art of judging the various wines available, which can be considerable, to determine which, when blended appropriately, can compliment or reinforce each others' strengths and overcome corresponding weaknesses.]
I suggest leaving the term in french, with an approximation in English in parentheses.

"assemblage
[ah-sahm-BLAHJ]
The French term for "assembling," referring to art of blending. In bordeaux assemblage describes the activity of judging the wines made from different lots (which can come from different varieties, the same variety from different parts of the vineyard, or grapes picked at different times and therefore showing different levels of sugar) and determining which lots are suitable for a château's final wines. In some cases, the wine will go into the premium brand; in other cases, it'll go into a second label or even be sold off in bulk. "

I find the word \"blending\" as well:
\"Blending is one of the most important steps in making fine wine with a distinct and unique character. It is intuitively obvious, no doubt, that when you blend wine, you are mixing or adding to the original, pure flavor profile of the individual lot of juice or wine. But what is an unblended wine? An unblended wine would come from grapes grown in a vineyard with no soil or rootstock or clonal or varietal differences. \"
