crisp

Different from the white asparagus, which is softer.
Example sentence:

The still crisp asparagus works incredible well with the cheese/potato layer underneath, what a yummy combo!

Peer comment(s):

neutral asptech : No connection to the Swedish word "spänstig".

See my note.
agree Catherine Brix : I'd add "tender" as in "tender-crisp" to illustrate that the asparagus should be soft (tender) but not mushy (crisp). Spänstig is like al dente for pasta.

"Mushy" and "crisp" are opposites. Iceberg salad and potato chips are crisp.

resilient

Would that work for vegetables?
Peer comment(s):

agree asptech : "Resilient" is certainly the correct English word for "spänstig". But words like "spänstig" or "mjäll" are often used as general appreciative words without any regard for their actual meanings.

There is according to my version of Norstedts - but dictionaries can't always be relied on, of course
